- In a bowl, whisk together soy sauce, honey, minced garlic, lemon juice, chopped thyme, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
- Slice peaches in half and remove the pit. Brush lightly with olive oil.
- Set your grill to medium-high heat (about 400°F).
- Cook marinated chicken for about 6-7 minutes on each side until internal temperature reaches 165°F.
- During the last 2 minutes of cooking, place peach halves cut-side down on the grill until caramelized.
- Plate grilled chicken alongside peaches; drizzle with any leftover marinade if desired.
