  • 1 cup Guinness beer original
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, cubed
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme or 1 tsp dried
  • 2 leaves bay leaves
  • 4 cups low-sodium beef broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Prep your ingredients by chopping the beef, vegetables, and mincing the garlic.
  2. Sear the beef cubes in olive oil over medium-high heat until browned on all sides. Remove from pot.
  3. Sauté onions until translucent; add garlic and cook until fragrant.
  4. Deglaze pot with Guinness beer and add beef broth, scraping up browned bits.
  5. Stir in thyme, bay leaves, carrots, and potatoes.
  6. Return seared beef to the pot; bring to a gentle boil then reduce heat to low.
  7. Cover and simmer for about 2 hours until the beef is tender.
  8. Taste before serving and adjust seasoning as needed.
