  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp cumin
  • 1 tsp chili powder

  • 2 cups shredded cheese (cheddar and Monterey Jack mix) divided

Cooking Instructions
  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large pot over medium heat, cook chicken until no longer pink (15-20 minutes). Shred with two forks.
  3. In a bowl, mix shredded chicken with diced tomatoes, cream of mushroom soup, minced garlic, cumin, chili powder, and half of the cheese.
  4. Layer half of the tortilla chips in the baking dish. Top with half the chicken mixture and sprinkle with more cheese. Repeat layers.
  5. Bake for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving.
