Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder ensure it's fresh
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup milk can substitute with almond milk
  • 1 large egg beaten
  • 1/4 cup olive oil
Add-ins
  • 1 cup shredded cheese cheddar or feta work well
  • 1/2 cup pitted olives chopped, green or black
  • 1/4 cup fresh herbs like parsley or oregano, chopped

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan with olive oil or line it with parchment paper.
  2. In a mixing bowl, combine the dry ingredients: flour, baking powder, and salt.
Mix Wet Ingredients
  1. In another bowl, whisk together the milk, beaten egg, and olive oil until well combined.
Combine Mixtures
  1. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  2. Fold in the shredded cheese, chopped olives, and herbs until evenly distributed.
Bake the Bread
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 45 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  2. Slice and serve warm or at room temperature.
