  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 pieces ripe peaches
  • 3 tbsp olive oil
  • 0.25 cup low-sodium soy sauce
  • 2 tbsp honey
  • 4 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp lemon juice
  • Salt to taste
  • Pepper to taste

Method
 

  1. In a bowl, whisk together soy sauce, honey, minced garlic, lemon juice, chopped thyme, salt, and pepper. Add chicken breasts and let marinate for at least 30 minutes.
  2. Slice peaches in half and remove the pit. Brush lightly with olive oil.
  3. Set your grill to medium-high heat (about 400°F).
  4. Cook marinated chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F.
  5. During the last 2 minutes of cooking, place peach halves cut-side down on the grill until caramelized.
  6. Plate grilled chicken alongside peaches; drizzle with any leftover marinade if desired.
