Cooking Steps
  1. Rinse and drain the chickpeas thoroughly. Pat dry with a paper towel.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Add the chickpeas and smoked paprika, cooking until crispy on the outside (approximately 5-7 minutes), stirring occasionally.
  4. Mix in the fresh spinach until wilted (about 2 minutes).
  5. Sprinkle mozzarella cheese over the mixture, covering briefly until melted (3-4 minutes).
  6. Drizzle lemon juice over the top before serving.
