Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes peeled and cubed
Sloppy Joe Filling
  • 1 lb ground beef or ground turkey
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tsp mustard yellow or Dijon
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Toppings
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup green onions sliced
  • 1 cup pickles sliced, optional

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper.
  3. Spread them out on a baking sheet and roast for 25-30 minutes until tender.
Make Sloppy Joe Filling
  1. In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the ketchup, Worcestershire sauce, brown sugar, mustard, salt, and pepper.
  4. Simmer for 10 minutes, stirring occasionally.
Assemble Bowls
  1. Divide the roasted sweet potatoes into bowls.
  2. Top with the Sloppy Joe filling.
  3. Sprinkle with cheese, green onions, and pickles if desired.
