Prepare the Chicken
- Place the chicken thighs in the slow cooker.
- In a bowl, whisk together honey, soy sauce, ketchup, sesame oil, garlic, and ginger.
Add Sauce
- Pour the sauce over the chicken in the slow cooker.
Cook
- Cover and cook on low for 4 hours or until the chicken is tender.
Thicken Sauce
- Remove the chicken and shred it with two forks.
- Stir in the cornstarch mixture to the sauce in the slow cooker and cook on high for 15 minutes to thicken.
Serve
- Return the shredded chicken to the slow cooker and mix well with the sauce.
- Serve over rice, garnished with sesame seeds and sliced scallions.
