Ingredients
  

Chicken
  • 2 pounds boneless, skinless chicken thighs
Sauce
  • 1/2 cup honey
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup ketchup
  • 2 tablespoons sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch mixed with 2 tablespoons of water
Garnish
  • 2 tablespoons sesame seeds toasted
  • 2 scallions sliced

Method
 

Prepare the Chicken
  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, whisk together honey, soy sauce, ketchup, sesame oil, garlic, and ginger.
Add Sauce
  1. Pour the sauce over the chicken in the slow cooker.
Cook
  1. Cover and cook on low for 4 hours or until the chicken is tender.
Thicken Sauce
  1. Remove the chicken and shred it with two forks.
  2. Stir in the cornstarch mixture to the sauce in the slow cooker and cook on high for 15 minutes to thicken.
Serve
  1. Return the shredded chicken to the slow cooker and mix well with the sauce.
  2. Serve over rice, garnished with sesame seeds and sliced scallions.
