Ingredients

  • 4 slices thick-cut bacon Choose high-quality bacon for rich flavor.
  • 4 links Irish sausages Use your favorite type, such as pork or beef sausages.
  • 4 medium potatoes Peel and cut them into thick slices for a hearty bite.
  • 2 onions Slice them thinly to enhance the dish's sweetness.
  • 3 cups chicken broth Provides a flavorful base that brings everything together.
  • 2 teaspoons fresh thyme Adds an aromatic touch to the stew.

Method

  1. Prepare Ingredients: Begin by slicing the bacon and sausages into bite-sized pieces, then peel and chop the potatoes and onions. Set aside all your ingredients in separate bowls for easier assembly later on.
  2. Layer Ingredients in Slow Cooker: In your slow cooker, start layering the ingredients by placing half of the sliced potatoes at the bottom followed by half of the onions, bacon, and sausages. Repeat these layers until all ingredients are used up, ensuring that you end with a layer of potatoes on top for an even cook.
  3. Add Broth and Seasoning: Pour in the chicken broth over the layered ingredients while sprinkling fresh thyme throughout for added flavor.
  4. Cook on Low Heat: Cover your slow cooker with its lid and set it to cook on low heat for about 6-8 hours or until all ingredients are tender and infused with flavor.
  5. Serve and Enjoy: Once cooked, carefully ladle out portions of the coddle into bowls, garnishing with additional thyme if desired. Serve hot alongside crusty bread or soda bread.
