Prepare the Ingredients
- In a skillet over medium heat, cook the bacon until crispy, then remove and set aside.
- In the same skillet, brown the sausages on all sides, then remove and slice into pieces.
Layer the Ingredients
- In the slow cooker, layer the sliced potatoes, onions, and garlic.
- Add the cooked bacon and sausage pieces on top of the vegetables.
Add Liquids and Seasonings
- Pour the chicken broth over the layered ingredients.
- Sprinkle thyme, black pepper, and salt over the top.
Cook the Coddle
- Cover and cook on low for 8 hours or high for 4 hours until the potatoes are tender.
- Stir gently before serving to combine the flavors.
