Ingredients
  

Meats
  • 4 links pork sausages preferably Irish bangers
  • 4 slices bacon thick-cut, diced
Vegetables
  • 4 medium potatoes peeled and sliced
  • 2 medium onions sliced
  • 2 cloves garlic minced
Liquids and Seasonings
  • 4 cups chicken broth low sodium
  • 1 teaspoon thyme dried
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste

Method
 

Prepare the Ingredients
  1. In a skillet over medium heat, cook the bacon until crispy, then remove and set aside.
  2. In the same skillet, brown the sausages on all sides, then remove and slice into pieces.
Layer the Ingredients
  1. In the slow cooker, layer the sliced potatoes, onions, and garlic.
  2. Add the cooked bacon and sausage pieces on top of the vegetables.
Add Liquids and Seasonings
  1. Pour the chicken broth over the layered ingredients.
  2. Sprinkle thyme, black pepper, and salt over the top.
Cook the Coddle
  1. Cover and cook on low for 8 hours or high for 4 hours until the potatoes are tender.
  2. Stir gently before serving to combine the flavors.
