Prepare Chickpea Mixture
- In a mixing bowl, add the drained chickpeas and mash them with a fork until mostly smooth, leaving some chunks for texture.
- Add the ripe avocado, dill pickles, lemon juice, fresh dill, salt, and black pepper to the bowl. Mix until well combined.
Assemble Sandwiches
- Lay out the slices of bread on a clean cutting board.
- Spread a generous amount of the chickpea mixture onto half of the bread slices.
- Top with lettuce leaves and tomato slices if using, then place the remaining bread slices on top to form sandwiches.
- Cut the sandwiches in half and serve immediately.
