Ingredients
  

Chickpea Mixture
  • 1 can chickpeas drained and rinsed
  • 1 medium avocado ripe
  • 1/4 cup dill pickles finely chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1 tbsp fresh dill chopped
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
Sandwich Assembly
  • 8 slices whole grain bread or bread of choice
  • 4 leaves romaine lettuce optional
  • 1/2 cup tomato sliced, optional

Method
 

Prepare Chickpea Mixture
  1. In a mixing bowl, add the drained chickpeas and mash them with a fork until mostly smooth, leaving some chunks for texture.
  2. Add the ripe avocado, dill pickles, lemon juice, fresh dill, salt, and black pepper to the bowl. Mix until well combined.
Assemble Sandwiches
  1. Lay out the slices of bread on a clean cutting board.
  2. Spread a generous amount of the chickpea mixture onto half of the bread slices.
  3. Top with lettuce leaves and tomato slices if using, then place the remaining bread slices on top to form sandwiches.
  4. Cut the sandwiches in half and serve immediately.
