Ingredients
  

Potatoes
  • 2 pounds baby potatoes or any small potatoes
Seasoning
  • 3 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder optional
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Potatoes
  1. Wash and scrub the baby potatoes thoroughly. Place them in a large pot and cover with water.
  2. Bring the water to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.
Smash and Season
  1. Preheat the oven to 450°F (230°C). Drain the potatoes and let them cool slightly.
  2. Transfer the potatoes to a baking sheet. Use a fork or a potato masher to gently smash each potato until flattened but still intact.
  3. Drizzle the smashed potatoes with olive oil and sprinkle with salt, pepper, and garlic powder if using.
Bake
  1. Bake in the preheated oven for 20-25 minutes, or until the edges are crispy and golden brown.
  2. Remove from the oven and garnish with fresh parsley before serving.
