Ingredients
  

  • 3-4 pieces boneless, skinless chicken breasts (about 1 lb)
  • 8 oz penne pasta
  • 4 cloves fresh garlic (minced)
  • 1 cup heavy cream
  • 1 tsp spicy red pepper flakes (adjust to taste)
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 can diced tomatoes (14.5 oz, no salt added)
  • 1 tsp Italian seasoning blend

Method
 

  1. Prepare your ingredients by chopping the chicken into bite-sized pieces.
  2. In a large skillet over medium heat, heat olive oil. Add chicken pieces seasoned with salt and pepper; cook until golden brown.
  3. Remove the chicken and sauté minced garlic and red pepper flakes in the same skillet until aromatic.
  4. Stir in canned tomatoes and heavy cream; add Italian seasoning. Simmer to combine flavors.
  5. Cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  6. Toss cooked pasta into the sauce, adding reserved water if needed for consistency.
  7. Fold in cooked chicken and Parmesan cheese until well combined and creamy.
  8. Serve hot with extra Parmesan on top!
