  • 6 cups fresh spinach washed and dried
  • 1 cup mandarin oranges peeled and segmented
  • 1/2 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup walnuts chopped
Dressing
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced

Method
 

Prepare the Salad
  1. In a large salad bowl, combine the fresh spinach, mandarin oranges, red onion, feta cheese, and walnuts.
  2. Toss gently to mix the ingredients evenly.
Make the Dressing
  1. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, Dijon mustard, and minced garlic until well combined.
  2. Season with salt and pepper to taste.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to coat.
