Ingredients
  

Egg Mixture
  • 6 large eggs beaten
  • 1/2 cup milk whole or low-fat
  • 1 cup cheddar cheese shredded
  • 1/2 cup spinach chopped
  • 1/4 cup red bell pepper diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Optional Add-ins
  • 1/4 cup cooked bacon crumbled
  • 1/4 cup feta cheese crumbled
  • 1/4 cup mushrooms sautéed and chopped

Method
 

Prepare the Oven
  1. Preheat the oven to 325°F (163°C).
  2. Grease a muffin tin with cooking spray or oil.
Blend Ingredients
  1. In a blender, combine the beaten eggs, milk, salt, and pepper. Blend until smooth.
  2. Add in the cheese, spinach, and bell pepper, and pulse a few times to combine.
Fill Muffin Tin
  1. Pour the egg mixture into the prepared muffin tin, filling each cup about 3/4 full.
  2. If using, sprinkle the optional add-ins evenly over the egg mixture.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the egg bites are set and lightly golden.
  2. Remove from the oven and let cool for a few minutes before removing from the muffin tin.
Serve
  1. Serve warm and enjoy your delicious egg bites!
