Batter
  • 1 cup fresh strawberries, sliced
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 cup unsalted butter, softened
Whipped Cream
  • 1/2 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1/2 cup vanilla pudding mix optional

Method
 

Preparation
  1. Toss sliced strawberries with a tablespoon of sugar and let them macerate for about 20 minutes.
  2. Preheat oven to 350°F (175°C). Cream butter and sugar until fluffy; add eggs one at a time with vanilla.
  3. Combine flour and baking powder; mix into wet ingredients until just combined.
  4. Divide batter into cupcake liners and bake for 15-18 minutes until golden.
  5. In a bowl, whip heavy cream (add pudding mix if desired) until stiff peaks form.
  6. Cut cooled cake cups in half horizontally. Layer strawberries and whipped cream between halves, then stack together.
