Ingredients
  

Chicken and Marinade
  • 4 pieces chicken thighs bone-in, skin-on
  • 1 cup fresh orange juice about 3-4 oranges
  • 1/4 cup soy sauce low sodium preferred
  • 1/4 cup honey or maple syrup
  • 2 cloves garlic minced
  • 1 teaspoon ginger freshly grated
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt to taste
Vegetables
  • 2 cups broccoli florets fresh
  • 1 cup carrots sliced
  • 1 cup bell peppers sliced, any color
Garnish
  • 1/4 cup green onions sliced
  • 1 tablespoon sesame seeds optional

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine the orange juice, soy sauce, honey, minced garlic, grated ginger, black pepper, and salt.
  2. Whisk until well combined.
Marinate the Chicken
  1. Place the chicken thighs in a large resealable bag or shallow dish.
  2. Pour the marinade over the chicken, ensuring it is well coated.
  3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Prepare for Roasting
  1. Preheat the oven to 400°F (200°C).
  2. Remove the chicken from the marinade and place it in a roasting pan.
  3. Arrange the broccoli, carrots, and bell peppers around the chicken in the pan.
Roast the Chicken
  1. Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  2. Baste the chicken with the pan juices halfway through cooking.
Serve
  1. Once cooked, remove the chicken from the oven and let it rest for 5 minutes.
  2. Garnish with sliced green onions and sesame seeds before serving.
