Prepare the Marinade
- In a mixing bowl, combine orange juice, soy sauce, honey, olive oil, garlic, ginger, black pepper, and salt. Whisk until well blended.
Marinate the Chicken
- Place the whole chicken in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Preheat the Oven
- Preheat your oven to 375°F (190°C).
Roast the Chicken
- Remove the chicken from the marinade and place it in a roasting pan. Reserve the marinade for basting.
- Roast the chicken in the preheated oven for about 45 minutes, basting with the reserved marinade every 15 minutes, until the internal temperature reaches 165°F (74°C).
Garnish and Serve
- Once cooked, remove the chicken from the oven and let it rest for 10 minutes. Garnish with orange slices and chopped parsley before serving.
