Ingredients
  

Chicken
  • 1 whole chicken about 4-5 pounds
Marinade
  • 1 cup orange juice freshly squeezed
  • 1/4 cup soy sauce low sodium
  • 1/4 cup honey or maple syrup
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon salt
Garnish
  • 1 orange orange sliced for garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Marinade
  1. In a mixing bowl, combine orange juice, soy sauce, honey, olive oil, garlic, ginger, black pepper, and salt. Whisk until well blended.
Marinate the Chicken
  1. Place the whole chicken in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
Preheat the Oven
  1. Preheat your oven to 375°F (190°C).
Roast the Chicken
  1. Remove the chicken from the marinade and place it in a roasting pan. Reserve the marinade for basting.
  2. Roast the chicken in the preheated oven for about 45 minutes, basting with the reserved marinade every 15 minutes, until the internal temperature reaches 165°F (74°C).
Garnish and Serve
  1. Once cooked, remove the chicken from the oven and let it rest for 10 minutes. Garnish with orange slices and chopped parsley before serving.
