Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 cup mixed bell peppers, chopped
  • 1 cup pineapple chunks
  • ¼ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 2 tbsp cornstarch
  • 2 tbsp sesame oil
  • ½ cup ketchup
  • ½ cup water
  • Salt and pepper to taste

Method
 

  1. Cut the chicken into bite-sized pieces and season with salt and pepper. Coat lightly with cornstarch.
  2. Heat sesame oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on all sides, approximately 5-7 minutes.
  3. Add minced garlic and chopped bell peppers to the skillet; sauté for another 2-3 minutes until fragrant.
  4. In a bowl, whisk together soy sauce, ketchup, water, rice vinegar, brown sugar, and additional cornstarch if desired. Pour the mixture over the chicken in the skillet.
  5. Gently fold in pineapple chunks and let everything simmer on medium-low heat for about 5 minutes until the sauce thickens.
  6. Serve hot over steamed rice or vegetables, garnished with sesame seeds or green onions if desired.
