  • 1 large red bell pepper, diced
  • 1 large yellow bell pepper, diced
  • 1 cup pineapple chunks
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 2 tsp cornstarch mixed with cold water mix with 2 tbsp cold water
  • 2 tbsp vegetable oil
  • sesame seeds for garnish, optional

Method
 

  1. Rinse fish fillets under cold water and pat dry. Cut into bite-sized pieces.
  2. Heat vegetable oil in a large skillet over medium heat. Sauté onion and garlic for 1-2 minutes until fragrant.
  3. Add fish pieces in a single layer; cook for about 3-4 minutes per side until golden brown and flakes easily.
  4. In a bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, and cornstarch mixture until smooth.
  5. Stir in bell peppers and pineapple; pour sauce over fish and gently mix until coated.
  6. Simmer on low heat for 5-7 minutes until the sauce thickens slightly.
  7. Serve over fluffy rice or alongside crispy noodles.
