Method
Prepare the Pork
- Preheat the oven to 375°F (190°C).
- Rub the pork loin with olive oil, salt, black pepper, garlic powder, onion powder, and thyme.
Sear the Pork
- In a hot skillet, sear the pork loin on all sides until browned, about 4-5 minutes per side.
Roast the Pork
- Place the seared pork loin in a roasting pan with carrots, celery, and onion.
- Pour chicken broth into the pan.
- Roast in the preheated oven for about 60-75 minutes, or until the internal temperature reaches 145°F (63°C).
Rest and Serve
- Remove the pork from the oven and let it rest for 10-15 minutes before slicing.
- Slice and serve with the roasted vegetables.
