Ingredients
  

Pork Loin
  • 2 pounds Pork Loin Roast Trimmed and tied
Seasoning
  • 2 tablespoons Olive Oil For rubbing
  • 1 tablespoon Salt To taste
  • 1 teaspoon Black Pepper Freshly ground
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Thyme
Vegetables
  • 4 carrots Carrots Peeled and cut into chunks
  • 2 stalks Celery Chopped
  • 1 large Onion Quartered
Liquid
  • 1 cup Chicken Broth Low sodium

Method
 

Prepare the Pork
  1. Preheat the oven to 375°F (190°C).
  2. Rub the pork loin with olive oil, salt, black pepper, garlic powder, onion powder, and thyme.
Sear the Pork
  1. In a hot skillet, sear the pork loin on all sides until browned, about 4-5 minutes per side.
Roast the Pork
  1. Place the seared pork loin in a roasting pan with carrots, celery, and onion.
  2. Pour chicken broth into the pan.
  3. Roast in the preheated oven for about 60-75 minutes, or until the internal temperature reaches 145°F (63°C).
Rest and Serve
  1. Remove the pork from the oven and let it rest for 10-15 minutes before slicing.
  2. Slice and serve with the roasted vegetables.
