Ingredients
  

  • 3 lbs chuck roast
  • 2 medium yellow onions chopped
  • 6 cloves garlic minced
  • 1 cup beef broth
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 chipotle peppers in adobo sauce chopped
  • 1/4 cup fresh lime juice
  • 2 tbsp fresh cilantro chopped for garnish
  • 2 bay leaves
  • Salt to taste
  • Pepper to taste

Method
 

  1. Prepare your ingredients by chopping onions and mincing garlic.
  2. Sear the chuck roast in a skillet over medium-high heat until browned on all sides.
  3. Remove the meat and sauté onions and garlic until soft.
  4. Blend chipotle peppers, beef broth, lime juice, cumin, oregano, and bay leaves until smooth.
  5. Return the meat to the slow cooker or Dutch oven and pour the sauce over it.
  6. Slow cook on low for 8 hours or high for 4 hours until tender enough to shred.
