Ingredients
  

Tofu and Marinade
  • 14 oz firm tofu pressed and cubed
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 inch ginger fresh, grated
Vegetables and Pineapple
  • 1 cup pineapple fresh, diced
  • 1 bell pepper red sliced
  • 1 cup snap peas trimmed
  • 2 scallions green sliced for garnish
  • 1 tbsp sesame seeds for garnish

Method
 

Prepare the Tofu
  1. Press the tofu for at least 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a mixing bowl, whisk together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger.
Marinate the Tofu
  1. Add the cubed tofu to the marinade and let it sit for 10 minutes.
Cook the Tofu
  1. Heat a skillet over medium-high heat. Add the marinated tofu and cook until golden brown, about 5-7 minutes.
Add Vegetables and Pineapple
  1. Add the sliced bell pepper and snap peas to the skillet, cooking for an additional 3-4 minutes.
  2. Stir in the diced pineapple and cook for another 2-3 minutes until heated through.
Serve
  1. Garnish with sliced scallions and sesame seeds before serving. Enjoy your Vegan Pineapple Tofu!
