Method
Prepare the Tofu
- Press the tofu for at least 15 minutes to remove excess moisture, then cut it into cubes.
- In a mixing bowl, whisk together soy sauce, maple syrup, sesame oil, rice vinegar, garlic, and ginger.
Marinate the Tofu
- Add the cubed tofu to the marinade and let it sit for 10 minutes.
Cook the Tofu
- Heat a skillet over medium-high heat. Add the marinated tofu and cook until golden brown, about 5-7 minutes.
Add Vegetables and Pineapple
- Add the sliced bell pepper and snap peas to the skillet, cooking for an additional 3-4 minutes.
- Stir in the diced pineapple and cook for another 2-3 minutes until heated through.
Serve
- Garnish with sliced scallions and sesame seeds before serving. Enjoy your Vegan Pineapple Tofu!
