Ingredients
  

Chicken Marinade
  • 1 lb boneless chicken breast sliced into thin strips
  • 2 tbsp soy sauce low sodium
  • 1 tbsp fish sauce
  • 1 tbsp honey
  • 1 tbsp lime juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp ginger grated
Noodle Bowl Ingredients
  • 8 oz rice noodles cooked according to package instructions
  • 1 cup cabbage shredded
  • 1 cup carrots julienned
  • 1 cup cucumbers sliced
  • 1 cup fresh herbs such as cilantro and mint
  • 1 cup bean sprouts
Dressing
  • 2 tbsp lime juice freshly squeezed
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tbsp water
  • 1 tsp chili sauce optional

Method
 

Marinate the Chicken
  1. In a bowl, combine soy sauce, fish sauce, honey, lime juice, garlic, and ginger. Add the chicken and marinate for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill over medium heat. Grill the marinated chicken for about 5-7 minutes on each side or until fully cooked.
Prepare the Noodles
  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop cooking.
Make the Dressing
  1. In a small bowl, whisk together lime juice, fish sauce, sugar, water, and chili sauce until well combined.
Assemble the Bowl
  1. In a large bowl, layer the cooked rice noodles, grilled chicken, cabbage, carrots, cucumbers, bean sprouts, and fresh herbs. Drizzle with dressing before serving.

Notes
