Method
Cook the Rice
- In a large pot, bring 2 cups of water to a boil. Add 1 cup of brown rice, reduce heat to low, cover, and simmer for about 30 minutes or until rice is tender.
Sauté the Vegetables
- In a skillet, heat a little oil over medium heat. Add diced red onion and bell pepper, and sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.
Combine Ingredients
- Add the rinsed black beans and corn to the skillet with the sautéed vegetables. Stir to combine and heat through for about 5 minutes.
Assemble the Bowls
- In serving bowls, layer the cooked rice, followed by the black bean mixture. Top with sliced avocado, salsa, chopped cilantro, and a squeeze of lime juice.
