Ingredients
  

Base
  • 1 cup brown rice uncooked
  • 2 cups water
Beans and Vegetables
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup bell pepper diced
  • 1 cup red onion diced
  • 2 cloves garlic minced
Toppings
  • 1 avocado sliced
  • 1 cup salsa your choice
  • 1 cup cilantro chopped
  • 1 lime juiced

Method
 

Cook the Rice
  1. In a large pot, bring 2 cups of water to a boil. Add 1 cup of brown rice, reduce heat to low, cover, and simmer for about 30 minutes or until rice is tender.
Sauté the Vegetables
  1. In a skillet, heat a little oil over medium heat. Add diced red onion and bell pepper, and sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.
Combine Ingredients
  1. Add the rinsed black beans and corn to the skillet with the sautéed vegetables. Stir to combine and heat through for about 5 minutes.
Assemble the Bowls
  1. In serving bowls, layer the cooked rice, followed by the black bean mixture. Top with sliced avocado, salsa, chopped cilantro, and a squeeze of lime juice.
