Ingredients
  

Sushi Rice
  • 2 cups sushi rice rinsed and drained
  • 2.5 cups water
Vegetables
  • 1 cup cucumber sliced into thin strips
  • 1 cup carrot shredded
  • 1 cup avocado sliced
  • 1 cup radish sliced
Protein
  • 1 cup cooked shrimp peeled and deveined
  • 1 cup crab meat or imitation crab
  • 1 cup tofu cubed and pan-fried
Sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha optional
Toppings
  • 2 tablespoons sesame seeds for garnish
  • 1 tablespoon nori sliced into strips

Method
 

Cook the Sushi Rice
  1. In a rice cooker, combine the sushi rice and water. Cook according to the rice cooker's instructions.
  2. Once cooked, let the rice sit for 10 minutes, then fluff with a fork.
Prepare the Vegetables and Protein
  1. While the rice is cooking, prepare the vegetables by slicing and shredding them as needed.
  2. If using tofu, pan-fry the cubed tofu until golden brown.
Make the Sauce
  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sriracha if using.
Assemble the Bowls
  1. In serving bowls, layer the cooked sushi rice, followed by the vegetables and protein of choice.
  2. Drizzle the sauce over the top and sprinkle with sesame seeds and nori strips.
