Ingredients
  

Egg Salad Base
  • 6 large eggs hard-boiled
  • 1/4 cup mayonnaise adjust to taste
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • 1/4 cup celery finely chopped
  • 1/4 cup green onions sliced
  • 1/2 tsp salt to taste
  • 1/4 tsp black pepper to taste
Crispy Topping
  • 1 cup panko breadcrumbs for crunch
  • 2 tbsp olive oil for frying
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika

Method
 

Prepare the Egg Salad
  1. Peel the hard-boiled eggs and chop them into small pieces.
  2. In a mixing bowl, combine the chopped eggs, mayonnaise, Dijon mustard, lemon juice, celery, green onions, salt, and pepper. Mix well until combined.
Make the Crispy Topping
  1. In a frying pan, heat the olive oil over medium heat.
  2. Add the panko breadcrumbs, garlic powder, and paprika. Stir frequently until the breadcrumbs are golden brown and crispy, about 5-7 minutes.
Assemble the Salad
  1. Serve the egg salad in bowls or on bread, and top with the crispy panko mixture.
