- Preheat your oven to 400°F (200°C).
- Spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper on both sides.
- In a bowl, combine Greek yogurt, minced garlic, thyme or oregano until smooth.
- Fold in chopped spinach and half of the grated Parmesan cheese.
- Place seasoned chicken in the baking dish and spread the yogurt-spinach mixture evenly over each breast.
- Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown on top.
