  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup vinegar (cane or apple cider)
  • 1 medium onion thinly sliced
  • 6 cloves garlic minced
  • 2 bay leaves
  • 1 tsp black peppercorns
  • 1 cup water
  • Salt to taste

Method
 

  1. Prepare all ingredients: mince garlic and slice onion.
  2. In a large pot, heat oil over medium heat. Sear chicken thighs until golden brown on both sides (about 5 minutes per side).

  4. Pour in soy sauce, vinegar, water, bay leaves, and peppercorns. Stir well.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes until chicken is tender.
  6. Taste the sauce; adjust seasoning as needed.
  7. Serve hot over steamed rice or with crusty bread.
