Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup zucchini grated
  • 1 cup sharp cheddar cheese shredded
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon olive oil
Flavoring
  • 1 cup green onions chopped

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the dry ingredients: flour, baking powder, and salt.
Mix Wet Ingredients
  1. In another bowl, whisk together the milk, egg, and olive oil.
  2. Stir in the grated zucchini and chopped green onions.
Combine Mixtures
  1. Pour the wet mixture into the dry ingredients and mix until just combined.
  2. Fold in the shredded cheddar cheese.
Bake the Bread
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 45 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and serve warm or at room temperature.
