Ingredients
  

Dry Ingredients
  • 1 cup almond flour
  • 1 tsp baking powder gluten-free if needed
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup plain Greek yogurt unsweetened
  • 3 large eggs room temperature
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease and flour a baking pan.
Mix Dry Ingredients
  1. In a mixing bowl, combine almond flour, baking powder, and salt. Whisk until well combined.
Mix Wet Ingredients
  1. In another bowl, whisk together Greek yogurt, eggs, applesauce, and vanilla extract until smooth.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Bake the Cake
  1. Pour the batter into the prepared baking pan and smooth the top. Bake for 30 minutes or until a toothpick comes out clean.
Cool and Serve
  1. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
